Vegan Hot Cocoa
Ingredients:
- 1 cup almond milk
- 1 tbsp. cocoa powder
- 1/2 tsp. vanilla extract
- 1 tbsp. granulated sugar
- 1 pinch salt
In small saucepan, whisk cocoa powder, sugar, and salt. Add almond milk (or other nondairy milk of choice), then whisk over medium-high heat. Once the mixture is at a low simmer, remove saucepan from heat and stir in vanilla extract. Pour into your favorite mug and enjoy! Serves 1. Recipe found from Pinterest here.
Key Lime Smoothie
Ingredients:
- 1 cup almond milk
- 1 tbsp. lime juice
- 1/2 tsp. vanilla extract
- 1 tbsp. maple syrup
- 1 handful spinach (or other green of choice)
- 1 lime zest
- 1 frozen banana
Blend these ingredients together (in order closest to blender blades). Serves 1. First discovered in 2015 here.
Reeses Cup Smoothie
Ingredients:
- 1 cup almond milk
- 2 tbsp. nut butter (I prefer almond butter, but I’ve used both peanut and cashew depending on what’s on the shelf!)
- 2 tbsp. unsweetened cocoa powder
- 1 frozen banana
Blend these ingredients together (in order closest to blender blades). Serves 1. I don’t remember the first time I saw it, but it was definitely on Pinterest!
Funky Monkey Smoothie
Ingredients:
- 1 cup almond milk
- 2 tbsp. nut butter (I prefer almond butter, but I’ve used both peanut and cashew depending on what’s on the shelf!)
- 2 tbsp. maple syrup (or a handful of dates)
- 1 frozen banana

“Nice Cream”
Ingredients:
- 1 cup almond milk
- 2 tbsp. nut butter (I prefer almond butter, but I’ve used both peanut and cashew depending on what’s on the shelf!)
- 2 tbsp. cocoa powder
- 2 frozen bananas
It sounds like the Reeses Smoothie, right? Same ingredients, only double the bananas and halve the milk proportion. Another Pinterest goodie!
Avocado Basil Pesto
Ingredients:
- 1/2 cup pine nuts
- 2 avocados
- 2 tbsp. lemon juice
- 1 bunch fresh basil
- 1/2 cup olive oil
- Sea salt and pepper to taste
I LOVE pesto! I could put it on every dish– pasta, pizza, burgers, grilled cheese… it’s so fragrant and satisfying! This recipe calls for pine nuts, but you can use cashews or even walnuts. If you use cashews or walnuts, I recommend soaking them first, and then pre-processing them in a food processor. From there, add the ingredients in whichever order you would like. Garnish with a few extra leaves of basil! This recipe came from chefchloe.com, but as of August 2020 this website is no longer available. I’m glad I saved this recipe when I did!
